Creamy Dill Potato Salad
A fresh take on a picnic classic! This creamy dill potato salad features tender potatoes, crunchy veggies, and a tangy herb dressing, making it the perfect side dish for spring and summer gatherings.
Ingredients
For the Salad:
- 2½ lbs baby red or Yukon Gold potatoes, halved or quartered 
- ½ cup celery, finely chopped 
- ¼ cup red onion, finely diced 
- ¼ cup dill pickles, chopped (optional, for extra tang) 
- 2 tbsp fresh dill, finely chopped (plus more for garnish) 
For the Dressing:
- ½ cup mayonnaise 
- ¼ cup plain Greek yogurt or sour cream 
- 1 tbsp Dijon mustard 
- 1 tbsp apple cider vinegar or pickle juice 
- 1 tsp honey or sugar (optional, to balance the tang) 
- ½ tsp salt (adjust to taste) 
- ¼ tsp black pepper 
Instructions
1. Cook the Potatoes
- Place the cut potatoes in a large pot and cover with cold water. 
- Add a generous pinch of salt and bring to a boil. 
- Simmer for 10–12 minutes, or until the potatoes are fork-tender but not mushy. 
- Drain and let cool slightly. 
2. Make the Dressing
- In a medium bowl, whisk together the mayonnaise, Greek yogurt (or sour cream), Dijon mustard, vinegar, honey, salt, and pepper until smooth and creamy. 
3. Combine the Salad
- In a large mixing bowl, gently toss the warm potatoes with the celery, red onion, pickles (if using), and fresh dill. 
- Pour the dressing over the mixture and stir gently until everything is evenly coated. 
4. Chill and Serve
- Cover and refrigerate for at least 1 hour to allow the flavors to meld. 
- Before serving, give it a gentle stir and top with more fresh dill for garnish.
