Ingredients
For the Salad:
2½ lbs baby red or Yukon Gold potatoes, halved or quartered
½ cup celery, finely chopped
¼ cup red onion, finely diced
¼ cup dill pickles, chopped (optional, for extra tang)
2 tbsp fresh dill, finely chopped (plus more for garnish)
For the Dressing:
½ cup mayonnaise
¼ cup plain Greek yogurt or sour cream
1 tbsp Dijon mustard
1 tbsp apple cider vinegar or pickle juice
1 tsp honey or sugar (optional, to balance the tang)
½ tsp salt (adjust to taste)
¼ tsp black pepper
Instructions
1. Cook the Potatoes
Place the cut potatoes in a large pot and cover with cold water.
Add a generous pinch of salt and bring to a boil.
Simmer for 10–12 minutes, or until the potatoes are fork-tender but not mushy.
Drain and let cool slightly.
2. Make the Dressing
In a medium bowl, whisk together the mayonnaise, Greek yogurt (or sour cream), Dijon mustard, vinegar, honey, salt, and pepper until smooth and creamy.
3. Combine the Salad
In a large mixing bowl, gently toss the warm potatoes with the celery, red onion, pickles (if using), and fresh dill.
Pour the dressing over the mixture and stir gently until everything is evenly coated.
4. Chill and Serve
Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Before serving, give it a gentle stir and top with more fresh dill for garnish.
