Creamy Dill Potato Salad

Ingredients

Instructions

1. Cook the Potatoes

  • Place the cut potatoes in a large pot and cover with cold water.

  • Add a generous pinch of salt and bring to a boil.

  • Simmer for 10–12 minutes, or until the potatoes are fork-tender but not mushy.

  • Drain and let cool slightly.

2. Make the Dressing

  • In a medium bowl, whisk together the mayonnaise, Greek yogurt (or sour cream), Dijon mustard, vinegar, honey, salt, and pepper until smooth and creamy.

3. Combine the Salad

  • In a large mixing bowl, gently toss the warm potatoes with the celery, red onion, pickles (if using), and fresh dill.

  • Pour the dressing over the mixture and stir gently until everything is evenly coated.

4. Chill and Serve

  • Cover and refrigerate for at least 1 hour to allow the flavors to meld.

  • Before serving, give it a gentle stir and top with more fresh dill for garnish.
