Tomato Basil Pasta with Garlic Oil
A light and fresh pasta dish made with sweet cherry tomatoes, fragrant garlic oil, and fresh basil. Simple, satisfying, and perfect for spring and early summer dining.
Ingredients
For the Pasta:
- 12 oz spaghetti, linguine, or pasta of choice 
- 2 tbsp olive oil 
- 4 cloves garlic, thinly sliced 
- 2 cups cherry or grape tomatoes, halved 
- ½ tsp salt 
- ¼ tsp red pepper flakes (optional, for heat) 
- Freshly ground black pepper, to taste 
- ½ cup fresh basil leaves, torn 
- ¼ cup grated Parmesan cheese (optional) 
- Zest of 1 lemon (optional, for brightness) 
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil. 
- Add pasta and cook according to package instructions until al dente. 
- Reserve ½ cup of pasta water, then drain and set aside. 
2. Make the Garlic Oil
- While the pasta cooks, heat olive oil in a large skillet over medium-low heat. 
- Add sliced garlic and sauté gently for 2–3 minutes, just until fragrant and lightly golden. Don’t let it burn! 
3. Add the Tomatoes
- Stir in the cherry tomatoes, salt, and red pepper flakes (if using). 
- Cook for 5–7 minutes, until the tomatoes soften and release some juices. 
- Use a spoon to gently smash a few tomatoes to create a light sauce. 
4. Toss the Pasta
- Add the drained pasta to the skillet with the tomato mixture. 
- Toss everything together, adding reserved pasta water a little at a time to loosen the sauce. 
- Stir in fresh basil, and adjust seasoning with more salt and pepper if needed. 
5. Finish and Serve
- Plate the pasta and top with Parmesan cheese, lemon zest, and extra basil, if desired. 
- Serve warm, with a side salad or crusty bread.
